This Kadhi recipe Is my mother in law’s recipe and its one of the treasured recipe and I always wanted to introduce in menu. Kadhi is prepared with tangy curd and besan/ gram flour slurry. Soft onion pakora were dipped in kadhi and topped with spicy fried onion and red chilies tadka.
What is Kadhi?
Kadhi is Hindi word and which means slow cooked yogurt sauce for some period of time. Punjabi Kadhi is little different from other kadhi we eat from different states in India. Punjabi Kadhi is little creamy and thicker than other kadhi. Spices and herbs are too different. onion pakora is used to give perfect texture and balance is taste and consistency.
Recipe to make pakora we use in kadhi.
Take a bowl. Add 2 tbsp of gram flour or besan, Add pinch of ajwain seeds, chopped onion, chopped coriander, salt as per taste and little red chilli powder and mix it well and add required water and make thick flowing paste. keep this mixture aside for 5 minutes. Till then take a pan or kadai to fry pakora. Heat oil pour small balls of pakora. Keep flame medium high.
Recipe to make Kadhi
200 gm curd for serve 4 to 5. Take curd in a big bowl and add 4 tsp of besan or gram flour and wisk it nicely using mathani or blender. Add 1 tsp of haldi and blend again. add 1 glass of water and blend again.
In Mean time take Kadai or cooker add 2 tsp oil and once oil is heated add methi seeds and let it cook well. Add blended curd and stir continuously in low to medium flame for 2 minutes. add 1 more glass of water and cook well. once curry start boiling add salt as required. kadhi should look like smooth flowing liquid and little fluffy. its sign that ur kadhi is ready. For tadka
Take a tadka pan, heat 2 tsp of desi ghee, add jeera, hing, chopped onion, green or red chilies and curry pata. heat everything till onion is golden brown. tada your tadka for kadhi is ready.
Final step
Put pakora in kadhi and boil for 5 minutes.
How to serve?
Take a plate, keep some boiled or jeera rice. Take a bowl, fill bowl with Kadhi and 4 pieces of pakora and garnish with tadka and coriander leaves. Serve with sliced onion and sabji. Kadhi chawal tastes awesome with sabji’s like bhindi, aloo fry, lauki and aloo soya methi.
