Its Scientific fact that, we all feel hungry but truly speaking being hungry sucks. We women spends half of our time in kitchen, but the question is spending hours in cooking a meal is nutritious and delicious? Its correct time to think of what I am eating and does my family fit and healthy.
Have a look at 5 healthy dinner recipes from my cook book:
Take a large skillet in that combine 1 bowl of boiled black beans, 1 cup of diced tomatoes, 1 cup of diced zucchini and 1 cup okra or lady finger. Cook all these for 5 to 10 minutes or till all veggies cooked nicely. Finally stir these veggies in your favorite hot sauce of your choice and add salt to taste. I love to mix veggies in spicy and creamy pink sauce.
Cauliflower and Kale Pasta
Take a small pot of water with a lid on it and boil it for 4 to 5 minutes. Add 1 serving of pasta (a small handful) and 3/4 cup of cauliflower florets. After 2 to 3 minutes remove cauliflower. Take a frying pan in that add 1/2 tbsp of olive oil, 1/2 shallot – chopped, handful of kale (inside part) and a 1 clove of garlic nicely chopped. Cook these ingredients for 4 to 5 minutes. Add cooked pasta along these veggies and add Parmesan cheese around of 1 tbsp grated and 1/4 cup of water. Toss it nicely so that everything combined and serve hot.
Take 5 asparagus spears, 1/2 cup of peas, 1/4 cup of fava beans, 1/2 cup of broccoli florets, combine all this and add it to pan coated with oil of your choice. Cook these veggies in medium heat. After a minutes remove veggies and keep it aside. You can use pre made sauce or can make fresh one. Combine veggies and sauce and cook it for 3 minutes veggies should be soft but still crisp from inside.
Veggie Fried Rice
Take 3/4 cup of cooked rice. Take a big frying pan in that add 1/4 cup of diced zucchini, 1/4 cup of cherry tomatoes, 1/4 cup of boiled black beans. saute all these for 5 to 7 minutes. Mix veggies and rice together and add 1 scramble egg in center and cook it for 3 minutes.Serve your fried rice.
Avocado Creamy Pasta
Take 1 serving of pasta and boil it as per instruction. Meanwhile take a bowl in that add 1/2 lemon juice, 1 tbsp of olive oil, 1 garlic clove, 1/8 cup of basil and 1/2 avocado. In a mixer grind all ingredients and make its puree. Take a frying pan and toss it together (sauce and pasta) and add salt to taste.
